Turkey And Andouille Gumbo

A Thanksgiving tradition in Louisiana is using up the leftover turkey and carcass to make gumbo, so we’re bringing a little Cajun deliciousness to the holiday season New York City. Similar to our regular gumbo, this gumbo starts with a dark roux before the addition of the trinity and a selection of Cajun spices. Get the best of leftovers without having to do any of the work!
