We poach chickens to make a light chicken stock, then add a variety of spring’s finest ingredient, including peas, spinach, carrots, and whatever else catches chef’s eye that week. We finish by adding some farro for its nutty, earthy flavors. This soup can carry a meal, and it also pairs very nicely with a fresh, vinegary spring salad.
