This is the vegan version of our famed Short Rib Chili. It starts with the same toasted chile paste, so the spice and flavor notes are very similar. It gets its heft from chickpeas that we mash to give it a thicker consistency. Perfect for the plant eaters, and so good that the carnivores won't miss the meat.
