An Italian tradition
This is a hearty option. A satisfying choice when you are hungry, but still looking to keep it light in the spring and summer months. It is a broth-based dish, filled with so many vegetables. Typically it would include pasta, however to keep our version gluten free, and on the lighter side, we use rice beans, a small bean grown on vines.
We include Garlic Croutons in your Stock Up order, but strongly suggest adding some pesto to bright the soup, along with fresh grated Parmesan.
