We love the opportunity to get creative at Good Stock, and that’s what we do with our Eggplant Parm Soup.
Roasted eggplant and tomatoes combine for a simply delectable soup. The name is a bit of a misnomer however, as we don’t actually use parmesan in this soup, so it’s completely vegan. But this allows you to have some fun at home! Fresh ricotta, mozzarella, parm, basil, and croutons are all fantastic additions to this soup!
