Chicken Escabèche is considered the national soup of Belize. It’s a light soup that is perfectly suited for hot weather, which is why this tropical country loves it so much. It starts with a really fragrant broth made from whole chickens and a variety of island spices, including clove, cinnamon, allspice, and coriander. Then pickled onions are added, the acidity of which really brightens the soup. In the shop, we top it with roasted jalapeños. Pickled jalapeños would work too, as would a few dashes of your favorite tropical hot sauce.
