Cauliflower & Vegetable Curry

This is a soup overflowing with vegetables and flavor. Cauliflower, chickpeas, eggplant and more make this a very hearty soup. The right amount of Madras powder gives it that great curry flavor, but not an overpowering one. We serve it with brown rice at the shop, but the soup is great on its own as well.

Vegan. Gluten Free.

Ingredients: Cauliflower, Rancho Gordo chickpea, Anita’s Coconut Yogurt, eggplant, onion, green bell pepper, garlic, madras curry powder, fermented vegetable stock, salt, pepper.
