Asparagus season in the northeast is a sign that spring is truly here, so we love this fresh, seasonal soup. We briefly pan-roast the asparagus in olive oil to sweeten up the natural, grassy flavor. Onions and garlic are added to the sauté, and everything is simmered and then blended with spinach at the end for extra freshness and extra healthiness. Asparagus Soup can be topped so many ways. Garlic croutons, crème fraîche, crisped prosciutto, or a poached egg are some of our favorites!
