This classic Good Stock soup celebrates one of summer’s best bounties in the northeast, sweet corn. We took a traditional corn chowder and turned it upside down. Corn and coconut are a perfect pairing, and using coconut milk also makes this soup vegan. The green chiles add the slightest touch of heat to perfectly offset the natural sweetness of the corn. And because we can’t get enough corn right now, we use the fresh cobs to make corn stock, permeating this soup with even more flavor. This is summer in a bowl.
