Roasted Mushroom Soup

This soup is one of the most popular in our repertoire. The mushrooms are roasted in one pan, while the onions and garlic roast in another. The combination gives this soup an umami-rich punch. A blonde roux is made to thicken the soup, and then we add just a touch of cream to balance and enhance the earthy flavor of the mushrooms. Have this with some crusty bread and you will not be disappointed.
