A flavorful broth is the foundation of this soup. Lemongrass is simmered with dried mushrooms, vegetables, and aromatics to produce a fragrant and slightly sweet broth. To that, we add bok choy, shiitake mushrooms, hen of the woods mushrooms, and bean sprouts. In the shops, we like serving this with sweet Thai black rice. But this would be great with pretty much any rice, and noodles would be a good call too.
