Moroccan Spring Lamb

This soup is a wonderful combination of savory and slightly sweet. We rub a leg of lamb with ras el hanout, that wonderful Moroccan spice mix, before searing and braising it to create an amazing lamb stock. To this we add chickpeas and diced tomato, and finish the soup with dried apricots and dates to give a touch of sweetness. Couscous and mint are wonderful additions to this soup. 

Ingredients: Leg of lamb, ras el hanout, onion, celery, carrot, chickpea, tomato, dried apricot, date, salt, pepper, olive oil, water.
