This soup falls in the category of “Mostly Inauthentic but Definitely Delicious.” This soup starts with a pork stock, to which we add sautéed ground pork and our house-made kimchi. It has a lovely sour and slightly spicy taste to it. We recommend serving this with rice cakes (easily found in Chinatown) or plain white or brown rice, and topping it with a big pinch of thinly sliced scallions.
