One of our wilder ideas, this completely inauthentic yet completely delicious soup is a riff on one of our favorite tacos. We simmer adobo-roasted chicken in corn stock. That chicken is then pulled and added back to the soup before finishing with lime to brighten everything up. Part of the fun of this soup is in the toppings. We recommend roasted pineapple, tortilla chips, cilantro, and lime.
