You know it's spring when Asparagus gets added to the menu.
This vegan soup is simple in ingredients, yet complex in flavor. We briefly pan-roast the asparagus in olive oil to sweeten up the natural, grassy taste. Onions and garlic are added to the sauté, and everything is simmered and then blended with spinach at the end for extra freshness and extra healthiness.
Top this with anything! Literally. Garlic croutons, crème fraîche, crisped prosciutto, or a poached egg are some of our favorites.
