Coconut Corn Chowder

Chilled, refreshing gazpacho is often considered a drink unto itself. But if you’re not sipping it solo, finding the right beverage for the chilled tomato-forward soup can be tricky. We’ve found that a dry vinho verde or a crisp Basque cider like Berrika can cut through and enhance the fresh tomato flavor with their gentle effervescence.

To underscore the fresh, vegetable-packed profile of our Summer Harvest Soup, a balanced, un-oaked chardonnay is a timeless match. Or for something a little bubbly, the natural effervescence of a chilled Pét-Nat makes a refreshing and pleasantly funky pairing.

Make It Yourself: The Spicy Paloma
2 oz Silver or Blanco Tequila
1 oz Fresh Lime Juice
½ Teaspoon Agave Nectar or Simple Syrup
1 Thinly Sliced Jalapeño
2 oz Fresh Grapefruit Juice
1 ½ oz Club Soda
Run a lime wedge around the rim of the glass. Roll the edge of the glass in sea salt. Fill the glass with ice. In a cocktail shaker, muddle lime juice, agave nectar, and one or two small slices of pepper depending on how much heat you want. Fill the shaker with ice. Add grapefruit juice and tequila. Shake until thoroughly filled. Strain into glass and top with club soda. Garnish with a small wedge of grapefruit.
