1 Apple, such as Fuji, Golden Delicious, or Gala
4c Mixed greens
1 shallot, sliced thinly
1/2c Chopped Walnuts
3 Tbsp Dijon Vinaigrette
Blue Cheese (optional)
Add shallot to vinaigrette and let marinate while the rest of the salad is prepared.
Slice apple thinly. Rub with half a lemon to slow down oxidation (ie, browning of the apples).
Add dressing to greens and mix gently but thoroughly with your hands. You want every leaf coated.
Add apple slices and toss gently.
Add to dish, and sprinkle each salad with crushed walnuts. Top with blue cheese, if using.
