We’re big fans of playing with our food at Good Stock. We love that our soups are dynamite on their own, but we also love using them as a canvas to create something new. We most often do this through garnishes, those final touches that make the soup a little different and more delicious. We encourage you to play with your food and get imaginative with our soups at your home!
One recent discovery we made was how well Anita’s Coconut Yogurt pairs with our Carrot Ginger soup. I was preparing dinner for my wife and I, and I was looking to put a spin on our traditional Carrot Ginger Soup. We had Anita’s in the fridge, so I gave it a shot. Adding just a little of Anita’s took the soup to the next level. It was sooooo good! The texture became even more creamy, the flavor became slightly tropical, and the zip of the ginger was now paired with the tang of the yogurt. I threw some toasted coconut flakes and sliced scallions on top. It was like a brand new soup, one that I’ll be having many times to come.
To make: Bring 1 pint of Carrot & Ginger Soup to a simmer. Turn off heat. Stir in 1/4 cup of Anita’s Coconut Yogurt into the soup.
Recommended toppings include toasted coconut flake, sliced scallions, chopped peanuts.
