Perfect Pairings: Wedge Salad and Potato Leek Soup

We love serving a Wedge Salad next to our Potato Leek Soup, possibly because we think they share a common characteristic: they're healthy and good for you overall, but they're fun enough to really enjoy eating too. 

Another bonus: the crisped bacon for the salad is a perfect topping for the soup.

Ingredients

3 slices of Bacon
1/8 head Iceberg lettuce, cut into a wedge
1 cup Cherry Tomatoes, halved
Blue Cheese Dressing
1 tbsp Chives
Salt
Pepper

Preparation

  1. Crisp three slices of bacon in a pan or oven. While the bacon is cooking, heat up the Potato Leek Soup. Once cool, rough chop into bit-sized pieces. Save half for the Potato Leek Soup.
  2. Place lettuce on a plate, and cover with dressing to your liking. 
  3. Carefully add the tomatoes, bacon, and chives. Sprinkle with salt and a few cracks of black pepper.
  4. Enjoy!
