The sharp apple, fresh cilantro, and bright lime dressing offer a great match for the subtle spice of our Curry Cauliflower & Chickpea Soup.
1 Medium Carrot, shredded
1/2 Green Apple, sliced thinly
2 cups Mixed Greens
2 tbsp chopped Cilantro
1/4 cup Extra Virgin Olive Oil
2 tbsp fresh Lime Juice
- Heat up the Curry Cauliflower & Chickpea Soup
- Make dressing by combining olive oil, lime juice, and a pinch of salt and pepper. Whisk thoroughly.
- Combine greens, apples, carrots, and cilantro, and pour half the dressing on top. Fold gently but thoroughly, until every leaf is dressed.
- Taste, and add more dressing, salt, and/or pepper as needed.
