Perfect Pairings: Cucumber Salad and Mushroom Miso Soup

One of our favorite summer salads is a simple cucumber salad. It's refreshing, straightforward, and so easy to make. Serve this alongside our Mushroom Miso Soup for light and splendid meal.

Ingredients

2 large Cucumbers, peeled and sliced into 1/2" quarter moons
1/4 tsp Red Pepper Flakes
1/2 tsp Sesame Seeds
2 tbsp Rice Wine Vinegar
1 tsp Toasted Sesame Oil
Salt

Preparation

  1. Combine cucumbers, rice wine vinegar, sesame oil, and a large pinch of salt. Fold gently to mix everything well.
  2. Heat Mushroom Miso Soup.
  3. 5 minutes before serving, stir the cucumbers. Add the pepper flakes and sesame seeds.
  4. Enjoy!
