One SaladThree Ways

Roasted carrots and edamame are one of our favorite pairs for an easy salad whose output is fancier than the inputs. We’ll show you three different ways to make scrumptious salads from this perfect pair.

The main ingredients for each salad are roasted carrots, and shelled edamame. To roast the carrots, preheat your oven to 425º. Coat carrots with a little bit of extra virgin olive oil, salt, and pepper and roast until slightly browned, about 30 minutes. Remove from oven and allow to cool.


 

SESAME STYLE

Ingredients
2 tbsp Toasted Sesame Oil
2 tbsp Vegetable Oil
2 tbsp Rice Wine Vinegar
1 tsp Black or White Sesame Seeds

Preparation
–Make the dressing by combining the sesame oil, vegetable oil, and rice wine vinegar and whisking until thoroughly mixed. Season with a little salt and pepper.
–Combine the carrots, edamame, and half of the dressing. Fold gently and taste. Add more dressing, and salt and pepper as needed.
–Sprinkle sesame seeds on top of the salad. Serve alongside Carrot & Ginger Soup. Enjoy!

 

SOUTHWESTERN

Ingredients
Cumin
Chili Powder
2 tbsp Extra Virgin Olive Oil
2 tsp Lime Juice
1 tsp White Wine Vinegar
¼ cup Chopped Cilantro
¼ cup Sliced Scallions
¼ cup Toasted Pepitas (Pumpkin Seeds)

Preparation
–Roast the carrots with salt, pepper, cumin,and chili powder.
–Make the dressing by combining the olive oil, lime juice, and white wine vinegar.
–Combine the carrots, edamame, cilantro, scallions, and half of the dressing. Fold gently and taste. Add more dressing, and salt and pepper as needed. –Sprinkle pepitas on top of the salad. Serve alongside Carrot & Ginger Soup. Enjoy!

 

HOME ON THE RANGE

Ingredients
2 Tbsp Green Goddess or Ranch Dressing
2 cups Baby Spinach or Regular Spinach, torn
¼ cup Pickled Red Onions, Chopped (Optional)
2 Tbsp Sliced Chives

Preparation
–Combine the carrots, edamame, spinach,and the dressing. Fold gently.
–Add Red Onions if using, and continue to fold gently. Taste. Add more dressing, and salt and pepper as needed.
–Sprinkle chives on top of the salad. Serve alongside Carrot & Ginger Soup. Enjoy!
