It’s Casserole Time!

Sometimes you just need to turn back the clock and turn up the comfort by making a casserole. And you know what makes a really good casserole? Really good ingredients, like our Broccoli Cheddar Soup.
You’re just one pouch of soup and a few other ingredients away from the homiest dish you’ve had all summer. We guarantee it.
  • 1 Broccoli Crown, medium
  • 1 Pouch Broccoli Cheddar Soup
  • 1 Egg
  • 2 Cups Rice, cooked
  • 2 Cups Shredded Sharp Cheddar, divided
  • 1/2 Cup Breadcrumbs
  • Extra Virgin Olive Oil
  • Salt
  • Black Pepper



  1. Preheat oven to 400°F
  2. Cut broccoli florets and stems into half-inches pieces. Toss in a large bowl with 1 tablespoon of extra virgin olive oil and a large pinch of salt and a few cracks of black pepper.
  3. Transfer broccoli to a 9x9 casserole dish and roast in oven for 20-30 minutes, until broccoli is roasty and soft. Remove and allow to cool breifly.
  4. Beat the egg in the same large bowl. Add the Broccoli Cheddar Soup, 1 cup cheddar cheese, cooked rice, roasted broccoli, and 1/2 teaspoon salt to bowl. Stir mixture thoroughly to combine.
  5. Butter or oil the 9x9 casserole dish. Pour broccoli and rice mixture into the dish and spread evenly. Top with remaining cheese, then top the cheese with breadcrumbs. 
  6. Bake at 400°F for 30-40 minutes, until cheese is fully melted and breadcrumbs are golden.
  7. Allow to cool for 5 minutes before serving.
  8. Enjoy!
