We’d like to shed a little light on the maligned potato, the humble tuber who’s received a bum rap the last couple of decades. It is our belief that whoever started the War on Carbs must have hated delicious. After all, the potato has given us French fries, baked potatoes, vichyssoise, potato skins, potato chips. What’s not to like? So it’s time to once again celebrate this wonderful ingredient, and all that it gives us.

Potatoes belong to the nightshade family, which includes tomatoes, eggplant, peppers, and tomatillos. Good company, right? The potato is actually the swollen part of the stem that feeds the rest of the plant. The potato is already giving back.

We might need two emails to list all this ingredient’s benefits! Potatoes are very good source of vitamin B6, and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber, and pantothenic acid. Oh, and they also contain carotenoids, flavonoids, and caffeic acid, otherwise known as antioxidants. Potato power indeed.
