One of my favorite things about our Black Bean Soup is it's versatility with garnishes. You can top it with soooo many things - cheddar, sour cream, tortilla chips, Fritos, and the list goes on. You can also add protein to it, which is what I do here with chorizo.
This is so simple that it doesn't even really require a recipe. "Formal" instructions on the bottom of the post, but briefly: You simply buy some raw chorizo, crumble it into a sauté pan, and render the sausage over medium-low heat until the chorizo is crispy.
Take the crispy sausage and place it atop your hot Black Bean Soup. I also like to add cotija cheese, tortilla strips, and torn cilantro to mine. But you do you! Now's the time to let your garnish flag fly.
Pro-tip: Crisp your chorizo in a sauce pan and remove once done. Reheat your soup in the same pan. Then pat yourself on the back for reaching Soup Baller status.
Black Bean Soup with Crispy Chorizo
For 1 pint of Black Bean Soup, you need:
3-4oz Raw Chorizo (smoked works too)
1 Tbsp Cotija Cheese
Place heavy sauté over medium low heat. Crumble raw chorizo into the pan and render. Break up large chunks with the back of your spoon. Render the sausage until crispy.
Meanwhile, reheat your Black Bean Soup over medium low heat, stirring frequently. When hot, ladle into a bowl. Place chorizo on top of the soup in the middle. Add tortilla strips, and then the cotija cheese. Tear a few cilantro leaves on top.
